Hummus Pepper Poppers

SUPER SNACKS!

Although I myself haven’t seen a game in years, the superbowl does seem to be a national holiday of sorts, and one based on snacking. I happily eat chips, salsa, and guac, but I enjoy upping my game a bit too, so to speak.

Little pepper poppers are super cute, and secretly super for you. The batch pictured is “Tuscan White Bean Hummus Poppers” but you can stuff yours with any number of fillings. I’ve made a particularly good, and good looking, version with black bean hummus garnished with cilantro. The mini peppers have been turning up at all the markets and should be easy to find. I nestled mine in red (orange) lentils, whose cuteness matched the peppers, to keep them upright, but you could use rice or any bean. Watch out for spills if you plan to cook the lentils, rice or beans later later, though.

Tuscan White Bean Hummus Pepper Poppers

Tuscan White Bean Hummus Pepper Poppers

If you make these ahead, the garlic flavor will intensify, so don't over-do.

Ingredients

  • 1 bag mini peppers
  • 1 can white beans drained, or 1 cup cooked
  • 1 small clove garlic
  • Pinch smoked paprika
  • 8 basil leaves, or 2 tsp. pesto
  • 2 Tbsp. nutritional yeast
  • Squeeze lemon juice or tsp. rice vinegar
  • Parsley leaves for garnish
  • Salt

Instructions

  1. Trim tops off of peppers and remove pith from inside.
  2. Put everything but the peppers and parsley in a mini food and puree. Taste and adjust seasoning.
  3. Spoon hummus into peppers and garnish with a parsley leaf.
